Chatting Sauerkraut with Dr. Lei Wei!
I was fortunate enough to chat with Dr. Lei Wei (a microbiologist post doc researcher at the Marco Lab at UC Davis) on her research on Sauerkraut! I hope you enjoy this as much as I did!
I was fortunate enough to chat with Dr. Lei Wei (a microbiologist post doc researcher at the Marco Lab at UC Davis) on her research on Sauerkraut! This was such a fun and informative conversation and made me realize all of the different factors that go into a research project!
Chatting Sauerkraut with Microbiologist Dr. Lei Wei #sauerkraut #research #fermentation Interview on YouTube

In the interview we go over the Intestinal Barrier Protective Effect, and seeing if sauerkraut food has this beneficial effect on it.
"Does Sauerkraut have any Intestinal Barrier Protective Effect?"
Then we dive into some of the research methodology: Control Group A batch (No bacteria added, just a "wild fermentation") versus Group B batch (adding a specific strain of Lactic Acid Bacteria). Breaking down the term "Gut Health" and the many facets about it. Talk about the actual research by using in vitro cell culture models. We dive into the term "Leaky Gut" and the positive effects sauerkraut has.

Debunking some of the marketing terms like "Probiotic" foods or "Contains Live Cultures" (please check out the additional resources linked below).
Determining a healthy serving size for fermented foods, the Master Food Preserver Program, and reducing food waste and sustainability from fermented food processes, and a bonus savory oatmeal recipe!

Thank you so much again to Dr. Lei Wei for the amazing research done, I am hoping to learn more about some fun fermented research projects in the future! It is truly exciting stuff! 😄
