My First "Real" Knife
Most people have crappy knives in their kitchen, hide them whenever I come visit or cook at your place. 😁
I've had my fair share of cheap knives early on.
The kind of knives mainly found on those knife set blocks from those big box stores... that usually are just a bunch of garbage.
I didn't really know much, and had that mentality that more is better... and it is usually never the case.

The knives from those sets are usually a chef knife, a bread knife, a paring knife, kitchen shears, a bunch of steak knives for some reason.
The chef is probably the only one that is actually useful and the rest are waste.
So early on in my cooking journey I used the chef knife, cause that's what I saw on TV and cooking videos on YouTube.
It was probably super dull because I didn't have the proper stones to keep it sharp.
Then one day one of my cook friends took me to a restaurant supply store, we bought some ingredients for a dinner. (I was really stoked because I didn't have a car in university, I usually biked everywhere). So whenever I visited these stores, I'd stock up!
Then I walked by the knives and thought to pick one up. It was only like $10-15. And it was pretty game changing. These knives were affordable but I didn't realize how much I was missing out.
They cut through vegetables and meat like butter, the handle was nice a sturdy, gripped well.
I worked faster and cleaner than before. I should have done this sooner, I guess that's why these store exist.
And so I am here looking at my old knife, probably like 10+ years old now. It has prepared many meals and served many people. I learned a lot and took the time to practice my skills with it.
I have a few more fancy knives from my recent trip to Japan. But the starter one is special. I mean I won't baby this thing but I do appreciate that it was an awakening to not have crappy knives in the kitchen. And if you do, I may judge you slightly (but it's all love 😉).

Or just go to your local restaurant supply store and get a cheap $10 knife. Asian grocery stores usually have solid cheap knives at that price point as well.
A whetstone is also a welcome addition, because if they are dull I can fix them for ya!
